Vegetable manchurian
Ingredients:
Beans finely chopped - 1 cup
Carrot grated - 1 cup
Cabbage grated - 1 cup
Cauliflower pieces - 1 cup
Garlic pieces - 1-2
Maida + Corn flour - As needed
Salt - As needed
Soya sauce - 1-2 tbsp
Chilli sauce - 1 tbsp
Green chillies finely chopped - As per taste
Ginger pieces - As per taste
Onion finely chopped - 1 cup
Tomato sauce - half cup
Oil - fry
Pepper+ jeera powder - 1 tbsp
Coriander - 1 bunch
Red chilli powder - 1-2 tbsp
spring onions - 3-4
Procedure:
Cook half cup of beans, carrot, cabbage, cauliflower until soft. Remaining half of the vegetables have to be crisply cooked. Mix all the vegetables(Soft and crisply cooked) and drain excess water(Mixing crisply cooked and soft cooked veggies makes the manchurian crispy n tasty). Now add cornflour+maida, salt and red chilli powder and mix thoroughly to get consistency enough to make the veggie dumplings (It should neither be too watery nor too floury).
Heat the oil in a pan and fry the dumplings and place them on a tissue paper to absorb excess oil. Once all the dumplings are fried, take a pan, put little oil and fry chopped onions to golden brown. Now add finely chopped spring onions, garlic pieces, ginger pieces, soya sauce, chilli sauce, tomato sauce, pepper-jeera powder and little salt as per taste. Allow the ingredients to cook on low flame for 2-3 minutes and add the fried veggie dumplings, put the cover on the pan, allow them to cook until soft. (Do not over cook them). Now serve the manchurian with garnished coriander on top.
